One pot, no fuss Lentil and Veg Soup

I’m always making this soup for my lunches at work, I often stick a pan on while I’m getting ready for bed and in half an hour its ready to go!

I always use red lentils, apple, onion and sweet potato, but I often vary the other ingredients I use depending on what I have in the fridge that needs using up. In this recipe I used the stalk of a broccoli head that was left over- most people throw the stalks away but I like to save them for soup.

Soup is amazing because its cheap, quick, nutritious and filling. So get clever and make soup!


-aprox. 80g red split lentils

-half a butternut squash

-3 medium sized sweet potatoes

-1 celery stick

-1 onion

-1 carrot

-1 apple

-stalks of a broccoli

-1 red pepper

-3 vegetable stock cubes

-heaped tbsp medium curry powder

-salt and pepper to taste

rOuGhly chop the vegetables and put into a large pan, add lentils, salt, pepper, stock cubes and curry powder.

Cover the veg with water and bring to the boil, then simmer for 20 minutes/ until veg is soft.

Blend it all up using a hand blender.

Thats it!
