Chocolate Protein Pancakes

I’m sharing another pancake recipe today, because I’m not obsessed or anything…

I’ve been going to the gym a lot more recently, so I have created a pancake recipe with a lot of protein to aid muscle growth and recovery.

This recipe is really simple and delicious, perfect before or after a workout.

There is protein not only from the protein powder, but also from the quinoa flakes, hemp seed and chia seeds!

Recipe:

-1 tbsp coconut flour

-1 tbsp oatflour

-1 tbsp buckwheat flour

– 1 tbsp quinoa flakes

-1 tbsp hemp seed

-1 tbsp chia seeds

-1 tsp baking powder

-1/4 tsp cinnamon

-1/2 tsp vanilla extract

-1 banana

-1 tbsp melted coconut oil

-200 ml of milk of your choice, I used cashew

-1/2 scoop (17g) vega chocolate nutritional powder (or protein of your choice)

Fresh fruit, maple syrup + peanut butter to top


-Using a hand blender, blend the banana and milk together until smooth.

-Add all other ingredients and blend until smooth.

-Heat a non stick frying pan, and add a small amount of coconut oil to coat.

-When hot, drop a tablespoon of batter into the pan to make each pancake.

-When pancakes bubble in the middle, flip onto other side.

-I made a big tower, sandwiching with peanut butter, strawberries and banana!
