Chickpea flour ‘omelette’

I have found breakfasts to be very easy since being vegan, I still make my pancakes and porridge but just substitute cows milk for an alternative milk.

However all my breakfasts are sweet options, and despite having a massive sweet tooth sometimes I want something savoury to start my day!

So here it is, an eggless omelette recipe made with chickpea flour…

I have played around with the spices and flavourings but you could adjust these as you need.



*makes 2 omelettes

-340g chickpea flour

-340g water

-110g nutritional yeast flakes

-1/2 tsp baking powder

-1/4 tsp black pepper

-1/2 tsp onion powder

-1/2 tsp garlic powder

-1/4 tsp – 1/2 tsp chipotle pepper

-1tbsp chopped coriander leaves

-pinch of salt

-drizzle of olive oil

-vegetables to top, I used half a red onion, half a courgette and half a red pepper.


-Mix all the dry ingredients in a bowl.

-Add the water and chopped coriander leaves and whisk until smooth and glossy.

-In a small nonstick frying pan using a small amount of olive oil fry your vegetables that will top the omelettes.

-At the same time, in another nonstick frying pan, heat a drizzle of olive oil.

-Pour half of your batter into the pan, and flip the omelette when bubbles form in the centre. (like when cooking pancakes) Cook until each side is golden.

-When both omelettes are cooked, top with the cooked vegetables and enjoy!

-Serve with some chopped tomatoes!
