Squidgy Chocolate Protein Squares

These were an absolute fluke I made this morning, I was making a snack for after the gym and threw lots of things into a bowl, and here you have it….

They are so squidgy and indulgent, with no added fat and 20g of protein in the whole recipe!

I didn’t manage to get any pictures of the process, because I didn’t think they would be any good!!

Ingredients:

-115g quinoa flakes

-2 bananas

-1 scoop (36g) vega chocolate nutritional protein powder

-200ml oat milk

-1 tbsp cocoa nibs

-4 dates chopped

-1 tsp cinnamon

-1 tsp vanilla

-1 tsp baking powder


Recipe:

-Preheat your oven to 180 degrees celsius.

-Grease and line a small baking tin, about 10cm x 10 cm.

-Using hand blender, blend the 2 bananas and oat milk to form a smooth liquid.

-Add all other ingredients and stir. If mixture is a bit thick, add some more oat milk.

-Pour into prepared tin and bake for around 20 minutes, or until you insert a knife into the cake and it comes out clean (with no cake mixture on)

-Remove from the oven and allow to cool for 20 minutes before slicing and eating šŸ™‚
